CARMENERE
- Vineyard Notes:
There is a predominance of alluvial soils of gravel type in most of the best vineyards with some soils of sandy profile in other areas. Vineyards are trained vertically to improve their exposure to the sun’s rays and enhancing the development of flavor in the fruit.Irrigation is applied prudently to maintain the balanced growth of the vine and achieve a constant ripening rate. The grapes are harvested manually to ensure that they arrive in good condition at the winery. They are separat-ed from the stalks and then crushed but leaving a significant percentage of whole grains.
- Vinification:
A cold maceration process of 48 hours took place before starting fermentation. The must was fermented in stainless steel tanks for about 10 days at controlled temperature of 26 and 28° C. Selected yeasts were added to the must. Once the alcoholic fermentation is finished, the malolactic fermentation is carried out naturally. It is stored in stainless steel tanks until bottling.
- Tasting Notes:
Purple red in color. The nose is dominated by blackber-ries and blueberries aromas intermingled with pleasant notes of coffee and chocolate. This is a medium bodied wine, silky, soft and very well balanced. A nice wine with a long-lasting aftertaste.
- Serving Suggestions:
Excellent with a wide variety of pastas, white meat and grilled meat.
