Fox Wines SpA

  • Vineyard Notes:
The grapes come from different growers in Chile’s Central Valley, where there is a predominance of alluvial soils. Vineyards are trained vertically to improve their exposure to the sun’s rays and enhancing the develop-ment of flavor in the fruit. The grapes are harvested by hand to ensure that they reach the winery in optimal conditions. They are separated from the stalks and then crushed.
  • Vinification:
The must is inoculated with selected yeasts to produce alcoholic fermentation. This process is accompanied by 7 days pump-overs to extract the colour and flavours. The temperature is controlled at between 26º and 28ºC in order to obtain maximum aromas and varietal charac-ter. Once alcoholic fermentation is completed, malolac-tic fermentation takes place naturally. The wine is stored in tanks before bottling.
  • Tasting Notes:
Bright ruby red color. The nose shows pronounced blackberry aromas combined with touches of leather and chocolate. Medium bodied in palate, this is a soft and fruity wine, very well balanced with fine-smooth tannins.
  • Serving Suggestions:

Ideal to combine with red meat, poultry dishes and cheese.
